16 cups zucchini shredded (peel on or off)
2 cups onions finely chopped
5 tbsp. coarse salt
2 1/2 cups vinegar
4 cups white sugar
2 tsp. celery seed
1 tbsp. dry mustard
1 tbsp. turmeric
1 tbsp. cornstarch
2 colored peppers diced

Directions:

Place zucchini, onions and salt together and let stand over night:

In the morning drain and rinse well with cold water:

In large pot combine vinegar, sugar, celery seed, dry mustard, turmeric, cornstarch and colored peppers, add zucchini and onions:

Heat to boiling then simmer for 30 minutes:

Pour hot into mason jars and seal with clean lids.

Always make sure your lids have sealed.
