Ingredients: 3 to 4 lb. beef roast(lean & tough is okay) 1/2 cup water 3 Tbsp vinegar (balsamic is best) 1 tsp chili powder 1/2 cup of chopped onion 2 Tbsp worcestershire sauce 4 to 6 cloves minced garlic 1 tsp Lloyd's "Bam" spice ( recipe in "This snd That" section of this cookbook * your favorite BBQ sauce for finishing recipe after meat is cooked

Directions:The meat should be seared or grilled to brown. It can be seared when frozen just to brown not to cook. Trim fat and cut meat into chunks to fit in a slow cooker( 3 or 4 pieces). Cut the chunks across the grain so when the meat is shredded after cooking the pieces will be about an inch long(easier to eat).Combine all the other ingredients except for the BBQ sauce in a bowl. Layer the roast chunks in a slow cooker and pour the other ingredients on top. Cook on low for 9 to 12 hours or on high 4 to 6 hours. Cook until the meat can be easily shredded with two forks. The longer it is precooked in the searing process the less time it takes in the slow cooker. After the meat can be shredded, remove meat and save the juices. Shred the meat and return the meat to the cooker. Mix one cup of juice with one cup of your favorite barbecue sauce. Stir the mixture into the meat mixture. Add more, one to one mixture, until the meat mixture is the consistency desired for the sandwiches. This can be heated through immediately or the mixture can be refrigerated over night. The over night marinating allows the flavors to mix. Hint: if you don't have Lloyd's bam recipe , use some pepper and seasoned salt. |
