1 can refried beans
2 avocados
¼ tsp. lemon juice
3 tbsp. mayonnaise
2 tbsp. sour cream
½ packet taco seasoning
¼ lb. each cheddar and monterey jack cheese, shredded
3 green onions with tops
½ small can chopped ripe black olives
1-2 tomatoes finely chopped
Shredded lettuce for garnish if desired (I usually skip this step)

Directions:

On the center of a large serving plate mold refried beans into a 9-10 inch pancake. Mash avocados and mix with lemon juice. Spread avocado mixture on top of beans. Mix together, mayonnaise, sour cream and taco seasoning. Spread mayonnaise mixture on top of avocado layer. Grate cheeses and sprinkle on top of mayonnaise layer. Chop onions tops and all. Mix onions with chopped olives and sprinkle on cheese layer. Lastly add the chopped tomato layer. Circle the entire stack with shredded lettuce if desired. Serve with tortilla chips.
