Ingredients: 1 T extra-virgin Olive oil... 1 T butter... 2 cloves garlic, minced... 2 shallots, minced... 1 cup vodka... 1 cup chicken stock... 1 can crushed tomatoes, 32 oz. can... Course salt and pepper... 1 pound pasta, Penne rug ate, preferred... 1/2 cup heavy cream... 20 leaves of fresh basil... Crusty bread, for passing...

Directions:Heat a large skillet over medium heat, add the olive oil, butter, garlic and shallots... Gently sauté the shallots for 5 minutes to developer their sweetness... Add the vodka to pan and reduce to equal 1 cup... Add the chicken stock and tomatoes... Bring the sauce to bubble and reduce the heat to a simmer... Season with salt and pepper...
While the sauce simmers, cook the pasta in salted boiling water until cooked to el Dante...
Stir the cream into the sauce and when the sauce returns to a bubble, remove from heat... Drain pasta and toss it with the sauce... You can tear the basil leaves or cut in thin strips and tools with sauce and pasta... Serve with crusty bread and a good red wine...

Notes: BASIL LEAVES.....many folks do not care for the flavor of basil, that being the case I take basil leaves, wash them, dry with paper toweling and place in dish on table... This allows guests to take a few leaves, tear them up and scatter them over the pasta, themselve...
I like tearing my own leaves as I tend to use more as the flavor to me is very good!
