3-4 sweet medium-large potatoes
4 carrots
2 white endives
1-2 oranges (blood oranges if available)
2 tablespoons rice vinegar
2 tablespoons dukkah spice mix (this is commercially available, but you may need to search)

Directions:
Place an oven rack in the center of the oven. Preheat oven to 450º.

Medium dice the sweet potatoes. Peel and medium dice the carrots. Roughly chop the endive, discarding the root end. Peel and medium dice the oranges, removing any seeds.

Place the diced sweet potatoes and carrots on a foil-lined sheet pan. Drizzle with olive oil and season with salt, pepper, and the dukkah spice mix; toss to coat. Arrange in an even layer.

Roast the sweet potato/carrot combination for 19-21 minutes or until browned and tender when pierced with a fork. Carefully transfer to a large bowl and set aside to cool for at least 10 minutes.

Whisk together the vinegar and olive oil; season with salt and pepper.

Just before serving, to the bowl of cooled vegetables add the chopped endive, diced orange, and dressing; season with salt and pepper. Stir to combine.
