1 c quick oats
1 1/2 c boiling water
1/2 c shortening
1 c white sugar
1 c brown sugar
2 eggs
1 tsp cinnamon
1 tsp salt
1 1/3 c flour
1 tsp baking soda

TOPPING:
6 tbsp melted butter
2/3 c brown sugar
1 tsp vanilla
1 c coconut
1/4 c cream or evaporated milk
1 c chopped walnuts or pecans

Directions:
Directions:
Preheat oven to 350 degrees. Mix together 1 c quick oats and 1 1/2 c boiling water, set aside.
Cream shortening, sugars, eggs, cinnamon and salt. Add oat mixture, then flour and soda. Put in a greased 9x13 pan and bake for 35 minutes. Cool on rack for 10 minutes.

Topping: Mix the toppings together and put on the cake, broil under the broiler for 3 minutes.

This recipe is a little unusual in that you broil the topping, but it is well worth the extra effort to do so, very different and delicious!
