5 cups bread or all purpose flour
2 (8 g) envelopes rapid rise yeast
1 Tbsp salt
1 Tbsp sugar
2 Tbsp olive oil
2 cups warm water (110º - 115º F or 43º - 46º C)

In the bowl of a stand mixer fitted with a dough hook, mix together the flour, yeast, salt and sugar.

While the mixer is running, drizzle in 2 cups warm water mixed with 2 Tbsp of olive oil. If needed, add additional water, one Tbsp at a time until the dough is fully moistened. Let the machine run until the dough comes together and pulls away from the sides of the bowl. (Mine is usually done by the time I've added the water.)

Turn onto a lightly floured, non stick surface. Knead 8 - 10 times until the dough is smooth and elastic.

Place in a bowl and drizzle with 1 Tbsp olive oil. Turn to coat all sides. Cover and allow to rise for 1 hour, until doubled in size. (I put mine in my oven on the proof setting.)

Divide up the dough into however many pizzas you want. (I usually make three. If you half the recipe it makes a very nice sized single pizza)

Bake assembled pizzas in a preheated 450º oven for 12 - 15 mins. If I'm making a very heavy pizza, like a meatball pizza, I prebake the crust for 10 mins before topping.
