8 potatoes
3 Tbl Veggie or olive oil
1 Tbl Parmesan cheese
1/2 Tsp Salt
1/4 Tsp Garlic powder
1/4 Tsp Paprika
1/8 Tsp Pepper
Shredded Cheddar cheese
Cooked bacon

Optional:
Sour cream
Chives or scallions
Avocado

Directions:
Directions:
1. Preheat oven to 400º

2. Clean & bake potatoes for 1 hour
3. While potatoes are cooking, combine: oil, parmesan cheese, salt, garlic powder and pepper in a small bowl.
4. Stir
5. Slice baked potatoes in half the long way
6. Scoop out potatoes leaving plenty around the edges
7. Place potatoes cut side down on baking sheet lined with aluminum foil
8. Brush potatoes with the oil mixture
9. Bake for 8 minutes in the 400º oven
10. Turn potatoes cut side up.
11. Fill potatoes with bacon and cheese
12. Bake for 8 minutes
