First Mixture:
1 Tbsp Butter
2 Tbsp White Sugar
2 Tbsp Baking Powder
1 cup Flour
½ tsp Salt
½ cup Milk
1 Egg
¼ cup Raisins
¼ cup Walnuts

Mix all ingredients. Spread in bottom of 9x9 dish.

Mix:
1 cup Brown Sugar
1 Tbsp Butter
2 cups Boiling Water
1 tsp Vanilla

Pour over mixture in 9x9 dish. Bake in hot oven for 20 to 30 minutes.

I got this recipe from Julia Harrison who worked with me at three Islands.

One day as we were serving this dessert at lunch time one of the guest asked, What is Jiffy Pudding?
My Best friend Benedicta Gideon Harrison replied, It was made in a Jiffy! I can still hear the laughter yet today.
