⅓ cup Canola oil
¾ cup white sugar
3 medium ripe bananas, mashed
2 cups white flour
½ cup dry oatmeal
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
¾ cup miniature semisweet chocolate chips

Preheat oven to 375°. In large mixing bowl, beat egg, oil, sugar and bananas until smooth. Add rest
of ingredients, except chips and mix just until moistened. Stir in chips. Fill
sprayed cupcake pan cups three fourths full. Bake 18 to 20 minutes or until
toothpick inserted in center comes out clean. Makes 1 dozen muffins.
