Falafel:

2 cans of chickpeas
1 lemon - juiced
1 small handful of fresh parsley, roughly chopped
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp ground coriander
4 tbsp whole wheat flour
Salt and pepper to taste
1 tbsp olive oil

Yogurt Dip: *I bought Joseph's tzatiki instead*

Plain low fat yogurt
1 garlic clove, crushed
Lemon juice, to taste
Pinch of paprika
Salt and pepper to taste

Directions:
Directions:
Combine all the falafel ingredients into a food processor and blend until well combined. Transfer falafel mixture into a large bowl. Shape the mixture into falafel patties (mine made 11) and refrigerate for 30 minutes.

Heat olive oil in a pan and saute falafels over medium heat. Cook for 4-5 minutes per side and serve with tzatiki or yogurt dip.
