1 Cup shortening
1 Cup sugar
1 egg
1 Cup molasses
2 Tablespoons vinegar
5 Cups sifted- all purpose flour
1 1/2 teaspoons soda
1/2 teaspoon salt
1 Tablespoon ginger
1 teaspoon cinnamon
1 teaspoon cloves

Cream shortening with sugar. Add egg, molasses and vinegar. Beat well until the mixture is light and fluffy. Sift the dry ingredients, stir in. Chill 3 hours. Roll thin on lightly floured surface. Cut in shapes. Place 1 inch apart on greased or parchment paper cookie sheet. If desired, sprinkle with colored sugar. Bake in a 375º oven for
5 to 6 minutes. Cool slightly and remove from cookie sheet to a wire rack.

I make this into Gingerbread men and other Christmas cut our shapes. I usually decorate the cookies with icing after they cool. Store them in an air tight tin or freeze. I made these for Scott's and Greg's classes every year when they were in elementary school. Everyone loved them. A great Christmas memory for our family. They look nice hung on the Christmas tree too!
