2 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. quick cooking oatmeal
12 oz. semi-sweet chocolate chips
1 c. coconut

Directions:
Directions:
Preheat oven to 350 º. In a large bowl, combine flour, baking powder, baking soda and salt. Set aside.
In a large mixing bowl, cream together shortening and both sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla.
Gradually add flour mixture to creamed mixture, mixing well with a spoon. Stir in oatmeal, chocolate chips and coconut.
Shape dough into 1 inch balls and place 2 inches apart on a greased baking sheet.
Bake for 10 - 12 minutes.
Makes 5 dozen.
