1 lb. fresh mushrooms
1 qt. chicken broth
1 medium onion chopped
6 tbsp. butter
6 tbsp. flour
3 c. milk
1 c. heavy cream
1 tsp. salt
white pepper
Tabasco© sauce
2 tbsp. sherry (if desired)

Directions:
Grate, grind or chop mushrooms caps and stems. Put broth, onion and mushrooms into large stock pot and simmer for 30 minutes. Melt butter in a sauce pan, add flour and stir with a whisk until well blended. Meanwhile, bring milk to a boil and add all at once to the flour mixture, stirring vigorously until sauce is thick and smooth. Add cream and sherry (if desired). Combine mushroom/broth mixture with the sauce and season to taste with salt, pepper and Tabasco©.
