1 large head cauliflower, cleaned and finely diced diced (about 4 cups)
6 hard boiled eggs
1 c. finely diced celery (2 ribs)
1 c. mayonnaise
½ tsp. yellow table mustard
½ tsp. freshly ground black pepper
¼ tsp. salt
⅛ tsp garlic powder
paprika for garnish
* You can add a tablespoon of fresh dill for a completely different flavor!

Bring a large pot of water to a boil over high heat. Cook the cauliflower pieces in boiling water for about 5 minutes, until tender. Drain thoroughly and immerse in an ice bath to stop the cooking. Drain well, then pat dry between several layers of paper towels. Place the cauliflower in a bowl with all remaining ingredients, (except paprika), mix well.
Sprinkle with paprika and chill at least 1 hour.
