Cake:
1 1/2 c vegetable oil
3 eggs
2 c sugar
2 t vanilla
3 c all-purpose flour
1 t salt
1 t baking soda
1 c chopped pecans
3 c finely cut peeled apples

Topping: (optional, it doesn't really need it!)
1 stick butter, cut up
1 c brown sugar
1/4 c milk

Cake:
Mix together oil, eggs, sugar and vanilla. In a large bowl, sift together the flour, salt and soda. Add oil mixture and blend well. Add chopped pecans and apples. Stir until well mixed. Preheat oven to 350. Pour cake mixture into a large tube or bundt pan and bake 1 hour. Add topping, remove from pan.

Topping:
On medium heat, stir and bring to boil. Cook 3 minutes on low heat. Pour over cake in it's pan and let stand until cool.
