1 lb. of your favorite sausage, use Italian, sage, pork or any sausage
2 cups milk
1/2 to 1 stick of butter
1/2 cup flour
salt and pepper to taste

Directions:
Break up sausage place in pan over medium heat. Continue to break up the sausage and cook till brown. Just before it is completely browned add 1/2 stick butter and let it melt in pan
Do not drain pan.
Once butter is melted stir in flour until there are no lumps of flour. Often the flour will coat the sausage and that is fine.

When the flour is all incorporated, slowly start to pour in the milk while stirring. Use all 2 cups of milk and keep stirring. When it looks like gravy, pull the from the heat and season to tasste with salt and pepper.

Now just pour over biscuits

Gravy may be made the night before and kept in the refrigerator also may be, made and frozen.

Don't have time to make biscuits, just use frozen or can

Enhance the flavor by adding 1/2 a stick of butter, or crushed red pepper flakes, or onion, or cheese, or any spice you like.
