Bread Pudding

3 large eggs
1 cup white sugar
2 tsp vanilla extract
1-1/4 tsp ground nutmeg
1-1/4 tsp ground cinnamon
1/4 cup butter melted
2 cups milk
1/2 cup raisins
1/2 cup coarsely chopped pecans
5 cups stale white bread cubes

In a large bowl beat the eggs with an electric mixer on high speed until frothy. Add the sugar, vanilla ,nutmeg, cinnamon and butter. Beat at high speed until well blended. Beat in the milk, then stir in the raisins and pecans. Stir the bread cubes into the egg mixture and stir until the bread is soaked. Add the pudding to a greased loaf pan. Let the pudding set until there is only a thin bead of liquid around the pans edges, about 45 minutes, patting the bread down in the pan occasionally.
Place in a preheated 350*f oven . Immediately lower the heat to 300*f and bake for 40 minutes.
Increase the temperature to 425*f and bake until pudding is well browned and puffy, about 15 minutes more. Serve either hot or cold with your favorite topping.
Note: 1) The bread pudding can be served cold with a whipped cream topping.
2) Maple syrup is good on this pudding as topping.
 

Caramel bread pudding topping

1/2 cup (1 stick) of butter
1 cup of brown sugar packed
1/4 tsp salt
1 tsp vanilla extract
1/2 cup evaporated milk

Directions:

In a small sauce pan, over medium heat, melt the butter and stir in the brown sugar. Whisk as the mixture cooks. Bring to a boil, remove from the heat, and whisk in the salt, vanilla and milk.
This sauce can be made ahead of time and stored in the refrigerator and reheated in the microwave. Serve hot on bread pudding.
 

Maple Cream bread pudding topping


Ingredients:

2 cups of heavy cream
1/4 cup of light corn syrup
1/2 cup maple syrup

Directions:
Directions:
Stir together the ingredients in a sauce pan, Stir over moderate heat until thickened and reduced by about a third. Refrigerate the sauce until it is cold and thick.
Drizzle the sauce on either warm or cold bread pudding.
