1½ c. sugar
1/3 c. plus 1 T. cornstarch
3 egg yolks
1½ c. water
3 T. margarine
2 t. grated lemon peel
1/2 c. lemon juice

MERINGUE:
3 egg whites
1/4 t. cream of tartar
6 T. sugar
1 t. vanilla

Directions:
Directions:
In a saucepan, mix sugar and cornstarch. Add egg yolks, after beating slightly and water. Cook over medium heat, stirring constantly until thickened. Remove from heat. Stir in margarine, lemon peel and lemon juice. Pour into a baked pie crust. MERINGUE: Beat 3gg whites and cream of tartar until frothy. Add sugar, one tablespoon at a time. Beat until stiff. Add vanilla. Top lemon mixture with the meringue. Bake @ 400º until golden brown.
