3 T olive oil
1 onion, medium, coarsely chopped
1 carrot, large, cut into bite-sized cubes
2 celery, ribs, sliced
1-1/2 tsp cumin (or to taste)
1 tsp coriander (or to taste
1 bay leaf
1 cup red lentils
5 cups chicken stock (or turkey)
1 cup chicken, chopped (or turkey)
Salt and Pepper to taste
1 T lemon juice
1/4 cup parsley, chopped

01 Heat oil in a medium pot over medium heat add onion, carrot, celery, spices and bay leaf and saute about 5 minutes or until the carrot begins to soften..

02 Stir in lentils and add chicken stock. Simmer gently for about 30 minutes or until lentils are soft.

03 Stir in chicken and simmer just until chicken is heated through. Season with salt and pepper to taste.
stir in lemon juice and parsley. Serve hot.
