4 T butter
1 bunch of green onions, thinly sliced
4 T A.P. flour
1-1/2 cups chicken broth
1 cup milk (or cream)
1-1/2 cups Chheddar cheese, shredded, divided
1/8 tsp pepper, freshly ground
1 tsp salt,Kosher (or to taste)
3 cups rice, cooked
3 cups chicken, cooked, diced

01 Heat oven to 350 F. Grease a shallow 2 Qt. casserole dish. Cook rice, measure 3 cups.

02 In a large sauce pan, melt butter over medium heat. Stir in green onions and continue cooking, stirring for 1 minute. Stir in flour until blended into the butter mixture. Add chicken broth and cook, stirring until; thickened. Add milk, 1 cup of cheese, salt and pepper.

03 Cook, stirring until cheese is melted. Add the cooked rice, chicken,; stir to blend. Taste and adjust seasoning as needed.

04 Spoon the chicken rice mixture into the prepared casserole dish and top with the remaining 1/2 cup of cheese. Sprinkle bread crumbs well drenched with butter over the cheese.

05 Bake for 25 to 30 minutes, until the edges and bread crumb topping is browned. Cool 10 minutes and serve.
