2 chicken breasts, season with montreal chicken rub (can add hot pepper if ya need spice)
1 onion or shallot diced
1/2 red pepper diced
3 cloves garlic diced
1 jalapeno diced (optional)
1 jar of pineapple salsa (Alicia's fav) or any flavor you like
1 8 oz cheese grated: we use pepper jack or cheddar
1 bag Lime chips or any tortilla chips
Handful of chopped cilantro

Directions:

Grill or saute the chicken breasts... let rest. In fry pan use some olive oil to saute the next three ingredients.
Shred the chicken, add to large bowl, then add veggie mix, salsa, and chopped cilantro.

On a baking sheet, cover with lime chips, add chicken mixture, then top with cheese. Bake in oven 400 for 10-15 mins or when cheese is melted!
