3 pounds onions halved and sliced through the root end 1/4 inch thick
3/4 cup water plus 1 TBSP water
2 Tbsp oil
3/4 tsp salt
1/8 tsp baking soda

Directions:
In a 12 inch skillet bring the 3/4 cup water, onions and oil and salt to a boil over high heat. Cover and cook until the water has evaporated and the onions start to sizzle about 10 minutes.
Uncover and reduce the heat to medium-high and gently press the onions onto the sides and bottom of the skillet using a silicone spatula. Cook without stirring onions for 30 seconds. Stir the onions scraping the fond from the skillet and press onions again onto the bottom and sides of the skillet. Repeat pressing cooking and stirring until the onions are softened, well browned and slightly sticky, 15 -20 minutes.
Combine the baking soda and remaining water in a bowl. Stir solution into the onions and cook stirring constantly until solution ahs evaporated about 1 minute. Transfer the onions to bowl. Onions can be refrigerated for up to 3 days or frozen for one month.
Use them for your own onion dip, on burgers or steak or to dress up your favorite veggies.
To make dip:
combine 1 cup sour cream, 2/3 cup caramelized onions chopped fine, 1/3 cup yogurt, 2 Tbsp minced fresh chives, 3/4 tsp. white vinegar and salt and pepper to taste.
