2 c. uncooked couscous
6 green onions
2 tomatoes
1 cucumber, peeled and chopped
½ c. garbanzo beans
1 c. fresh chopped parsley (do not omit)
Dressing:
¾ c. olive oil
½ c. fresh lemon juice
2 cloves garlic, minced
1 tsp. Dijon mustard
1 tsp. ground coriander
1 tsp. salt
fresh ground pepper

Directions:
Directions:
Cook couscous according to package directions, cool. Place couscous in a large bowl. Slice green onions and add to couscous. Remove seeds from tomatoes, discard seeds. Chop tomatoes and add to couscous. Add cucumber, garbanzo beans, and parsley. Mix all dressing ingredients together in a bowl, whisk until well blended. Pour dressing over couscous and gently stir to mix all salad ingredients with the dressing. Serve chilled.
