1/4c. cashews
1/4 Soy milk ( any plant based milk)
1 tsp apple cider vinegar
2 tsp vanilla extract
2-3 tablespoon date paste
1 cup powdered sugar
3-6 drops food coloring (Based on preference)

Directions:
Directions:
First soak or boil your cashews to become soften and drain.

Add back into saucepan on low heat with milk and apple cider vinegar for less than 30 sec stop when bubbly.

Then add this mixture to high powered blender and blend down to throffy paste add your vanilla extract and date paste then 1/4 cup at a time add powder sugar and blend... Once the whole cup of powder sugar is blended add your food coloring and pipe into bags.

Let sit in fridge for about 30 min -1 hr before frosting. Also add cupcakes to fridge after frosting so it can firm up.

No It's not terribly nutty its really creamy and delicious and has a great flavor profile. I like the protein (peanut buttery) aspect you can also add lemon zest and make it tangy.
