8 Cups riced Russet potatoes (about 16 to 20)
1/2 Cup butter
1 Tbsp salt
1/2 Cup whipping cream
4 Cups flour

Directions:
Peel potatoes and cook. Drain.
Rice potatoes in a ricer. Some bakers put through ricer twice.
Add butter, cream and salt.

LET STAND UNTIL COLD - VERY IMPORTANT!

Mix in flour and roll into balls the size of a tennis ball or smaller. Keep balls of dough on a plate in the refrigerator. Take out one at a time.

Roll out ball of dough, paper thin, on a lightly floured board. (Some bakers cover board with canvas)

Bake on lefse grill at 500 degrees.
