1 lb. ground beef
1 cup dry breadcrumbs (can use Pepperidge Farms stuffing, run thru food processor)
1 egg, beaten
1/2 cup milk
2 Tbsp. onion (may use minced onion)
1 tsp. salt
1/8 tsp. pepper
1 can cream of mushroom or cream of chicken soup
3/4 soup can of milk

Preheat oven to 350º. Line a large baking sheet with parchment paper.

Mix meat, breadcrumbs, egg, milk, onion, salt & pepper together. Form into balls - about 1 1/2" or whatever size you like. Place them on baking sheet and brown them in the oven for a 30 minutes. If you are going to eat them soon, place the browned meatballs in a sprayed casserole dish. Mix soup and milk together in a bowl and pour over meatballs. Bake for 45 minutes in 350º oven. If you are making them ahead for a meal, place the browned meatballs in a sprayed crock pot, mix together the soup and milk and pour over the meatballs. Put on high for 3 hours or on low for 6 (or however much time you have).

If you want extra gravy (cream of chicken tastes best), double the soup and milk. If you are tripling this recipe, only double the soup mixture. Makes about 20 meatballs per pound of ground beef. The meatballs freeze good for make ahead meals.
