Pancake Mix:
4 tsp Salt
4 tsp Baking Soda
2 c Cake Flour
1½ c Sugar

Pancakes:
4 Eggs
2 c Sour Cream
¾ c Pancake Mix (more if too runny)

Pancake Mix:
Mix all dry ingredients well. Should keep in the pantry for a couple of months and in the freezer for 6 months.

Pancakes:
Makes 50 to 60 pancakes.

Put the eggs in a mixing bowl and stir until well blended. Add the sour cream, and pancake mix, and mix well.

Heat a griddle or frying pan until it is good and hot, film with grease, and drop small spoonfuls of batter onto the griddle, just enough to spread to a 2½ inch round.

When a few bubbles appear on top of the pancakes, turn them over and cook briefly.
