2 c Flour
1 tsp Baking Powder
½ tsp Baking Soda
1 tsp Salt
3 T Sugar
1 tsp Cinnamon
1 tsp Cloves
½ tsp Ginger
½ tsp Nutmeg
½ tsp Mace

4 T Butter, melted and cooled
2 c Buttermilk, room temperature
2 lg Eggs, room temperature
¼ tsp Vanilla

1 c Tart Apples, grated
1 c Toasted Pecans, chopped

Preheat the griddle to 350°F.

Sift dry ingredients into a bowl. Whisk wet ingredients in a separate bowl. Add wet ingredients to dry ingredients and mix only until combines. Do not overmix. Fold in apples and pecans. Let batter sit for up to 30 minutes.

Lightly butter or oil the griddle. Use a ¼-cup measure to pour each pancake onto the griddle surface. Use a spatula to turn pancakes once bubbles start to form all over the pancakes and the edges start to set. Cook on other side for another minute or so,just until set and slightly browned.
