"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

3 cups purchased peeled garlic (BJ's: in produce aisle)
1/3 cup olive oil
water
salt
pepper

Directions:
Directions:
Preheat oven to 375.
Place garlic in 9x13 roasting pan. Drizzle with olive oil. Add water to almost cover garlic. Bake for 30 to 60 minutes, until water is evaporated and the cloves are golden brown and soft. (Gently stir/flip garlic once or twice once they start to brown.) Remove from oven and season with salt and pepper to taste.

Pour off any standing oil and reserve for future use (delicious flavor).
Store in airtight container in refrigerator for up to 2 weeks. I freeze some of the roasted garlic in small containers or bags for future use.
