1¼ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ cup old fashion or quick cooking oats
½ cup (one stick) butter
¾ cup firmly packet brown sugar
½ granulated sugar
1 egg
1 teaspoon vanilla
1 cup Raisin Brand or Honey Bunches of Oats cereal
1¼ cups flaked coconut
½ cup raisins or dried cranberries

Preheat the oven to 350º. Mix the flour, baking powder, baking soda and oats. Set aside. Beat the butter and sugars in a large bowl with the electric mixer on medium with speed until light and fluffy. Add egg and vanilla and mix well. Gradually add flour mixture beating until well blended after each addition. Add cereal, coconut, and cranberries, stirring until blended.

Drop heaping teaspoons of dough 2 inches apart onto ungreased baking sheets. I use Parchment Paper to cover my cookie sheets. Bake 14 to 16 minutes or until lightly browned. Cool on baking sheets for 4 minutes and then remove to wire racks. Cool completely and store in a tightly covered container.

My friend Judy Foulke brought these cookies to our beach house and they did not last long. They are delicious but they do crisp up quickly so keep them in a tin.
They also have healthy ingredients in them which is good for cookies.
