1 lb. ground beef or turkey
1 medium onion, diced
½ lb. fresh mushrooms, sliced
½ t. garlic powder
¼ t. salt
½ t. oregano
dash pepper
dash nutmeg
dash cumin
⅔ bag of washed, fresh baby spinach, chopped
3 eggs, beaten
OR
¾ c. egg substitute

Directions:
Directions:
Saute onions and mushrooms in vegetable oil.
Push to sides of pan and brown meat. Drain.
Add seasonings, mix well, and cook for several minutes.
Add spinach, mix, and cook for several minutes.
Add eggs, mix well, and cook over low heat until eggs are firm.
Serve with sour cream.
