1 Head Butter Lettuce or Spring Mix
2 Chopped scallions
3 oz. blue cheese
Toasted pecans or caramelized in melted butter and sugar.
½ to 1 cup of dried cranberries

Directions:
Directions:
Chop the scallions, and crumble the blue cheese. Toast the pecans or caramelize the pecans in the butter and sugar in a skillet. I usually just toast the nuts as it is less calories and still tastes great. Add the cranberries and toss everything with the lettuce.
