3 eggs
2 c. sugar
2 c. grated zucchini
1 c. oil
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp vanilla
1 tsp. salt
3 tsp. cinnamon
3 c. flour
1/2 c. chopped nuts

Directions:

Pre-heat oven to 350º

1. Beat eggs until foamy.
2. Add oil, sugar, grated zucchini, and vanilla; beat well.
3. In separate bowl, sift together, flour, salt, baking soda, baking powder, cinnamon.
4. Slowly add flour mixture to batter.
6. Prepare 2 loaf pans (butter and dust with flour)
7. Bake 1 hour
