Eight fish fillets, any firm white fish such as cod or halibut
1/4 cup yellow mustard
1/2 cup flour
1 tsp. salt
11/2 cups bread crumbs
1 bunch green onions, chopped
8 tbsp. butter, melted
2 tbsp. parsley, chopped

Directions:
Directions:
Preheat oven to 400º. Combine flour and salt and set aside. Grease baking dish or spray with cooking spray and sprinkle green onions on the bottom of the dish.
Brush fish fillets on both sides with mustard. Dust fish in salted flour. Dredge fish in bread crumbs. Place fish in dish and dribble with melted butter.
Bake in 400º oven for 5 minutes and then broil fish until it is brown and flakes easily. Sprinkle with parsley. Serve with lemon wedges and tartar sauce.
