Eight medium Russet potatoes, peeled and cut into chunks
1/2 cup half and half
1 stick butter
3 tbsp. prepared horseradish
Salt and pepper

Directions:
Directions:
Peel potatoes and boil in salted water until tender, about 20 minutes. Drain potatoes and return to same pot.
Add butter and mash potatoes, using a potato masher. Add half and half, horseradish, salt and pepper to taste. Beat potatoes with electric mixer until creamy.
Adjust half and half to obtain desired consistency and the amount of horseradish to desired flavor.
