3 lbs. small red or white skinned potatoes or a mixture of these potatoes
¼ cup good olive oil
1½ Kosher salt
½ teaspoon freshly ground black pepper
1 Tablespoons, minced garlic ( six cloves)
2 Tablespoons minced fresh parsley

Directions:
Directions:
Preheat the oven to 400º and preheat the baking sheet in the oven. Cut the unpeeled potatoes in half or quarters. Place the potatoes salt, pepper, garlic and Olive Oil a bowl and toss. Place the potatoes on the preheated baking sheet and spread out. Roast in oven for 1 hour or until browned and crisp. Stir twice with spatula while cooking. Toss cooked potatoes with the parsley. Season to taste, but it is unlikely you will need more seasoning.
