Apple Sauce Recipe

8 to 10 cups of apples peeled, cored and cut into 1/2 to1 inch chunks
1 cup apple cider
3 to 5 Tbsp of honey, depending on the tartness of the apples
1/2 tsp of cinnamon
1/4 tsp of nutmeg
1 Tbsp vanilla extract

Directions:
Directions:
Put the apples in a 2 quart sauce pan. Mix the next four ingredients in a bowl and pour over the apples. Cook covered over medium to low heat and stir frequently until apples are soft. Mash with a potato masher to your desired consistency. Remove from the heat and stir in the vanilla.
Serve warm or cold Very delicious chilled by itself or with a scoop of ice cream.
Note 1) We add the vanilla last so it's flavor wouldn't boil out of the cooking apples.
2) We like our apple sauce lumpy so we don't mash it very much.
3) This apple sauce can be frozen or canned.
