yolk (optional)

Directions:

Tear apart bread into small cubes and place in a bowl
Add enough of either liquid, and allow to soak up into the bread.
Squeeze the moisture from the mixture break apart into your recipe mix.

Panade is a paste with the consistency of a very moist dough. It can be savory or sweet.

Used as binder for other food ingredients, such as ground meat or fish;
thicken sauces add volume, capture flavors.

A Panade is made from a liquid such as milk, stock or just water and bread of some type usually day old.
Some recipes call for butter or egg yolk I can only assume it is to add protein to meats that do not contain higher levels of fat.
