2 1/2 cups flour
1 1/4 cups sugar
3 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
3 eggs
3/4 cup applesauce *
1/2 cup vegetable oil (can also use coconut oil)
2 tsp vanilla
2 cups grated carrots
1 1/2 cups peeled and grated apple (approximately 2 apples)
1 cup crushed pineapple (I use some of the juice)
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped walnuts

Directions:

Combine first 5 ingredients in bowl and stir. In a mixing bowl add eggs, applesauce, vegetable oil, and vanilla and mix all together, then slowly add flour mixture until just moistened (batter will be thick). Then stir in carrots, apples, pineapple, coconut, raisins, and walnuts until well combined. Fill greased or paper lined muffin tins 2/3 full (I used a 1/3 cup measuring cup). Bake at 350º for 20 to 25 minutes. Cool for 5 minutes in pan before removing from pan to wire racks. If using a standard 1/2 cup muffin tin, recipe will make 24 muffins.

*Hint: I like to use Lloyd's Homemade Applesauce recipe, which is in this cook book under the "Dessert" section.
