2 cups vegetable-See NOTE
1-1½ onion, sliced lengthwise
2 tbsp oil
1 tsp coriander
¼ tsp turmeric

1 green chili

NOTE: The following are suggestions for vegetables
Beets-thin strips
Carrots-thin strips
Potatoes-thin strips
Green beans-cut in aproximately half

Directions:
Heat oil and mustard seed. Add onion once seeds start to pop. Add spices cook. Then add vegetable. Cover tightly for 2 minutes. Uncover and keep stirring until cooked through.
