Chicken

2 onions, chopped
2 tbsp ginger, chopped
1 tbsp garlic, chopped
2 tbsp coriander
½ tsp chili powder
2 tsp paprika
1 tbsp meat masala
2 tsp ground fennel
¼ tsp turmeric
2 tomatoes chopped OR
1-2 tbsp tomato paste + 2 tsp water
1 tsp salt
2 tbsp oil

Directions:
Directions:
Heat the oil, add mustard seeds and wait til they pop. Add the onion, saute til golden then add ginger and garlic and continue to saute for 5 minutes without letting it burn.

Remove from heat, add the spices in the order given except the fennel. Add the tomato. Once the oil separates from the tomato, add the fennel and curry leaves.

Add the chicken, stir to coat all sides. Add ½ cup water. Bring to a boil then lower heat. Simmer until done.
