3/4 cup sugar, divided
1/3 cup all-purpose flour
Dash of salt
4 eggs, divided ( separate yolks from whites in separate bowls)
2 cups milk (whole)
1/2 tsp. Vanilla extract ( I also add a small squeeze of lemon juice)
35-45 Nabisco Vanilla Wafers
5-6 ripe bananas

1. Combine 1/2 cup of sugar, flour, and salt in top of double boiler. Stir in 4 eggs yolks and milk. ( I stir egg yolks into milk, then add to flour mix). Stir well.
2. Cook uncovered, over boiling water, stirring constantly 5-20 minutes or until thickened.
Remove from heat and add vanilla. ( I also add a small amount of lemon juice. I usually add 1 teaspoon vanilla)
3. Spread small amount of pudding mixture on bottom of 1 1/2 quart casserole dish.
4. Cover with layer of wafers, then a layer of sliced bananas. Pour 1/3 of pudding over bananas.
5. Repeat layers of wafers, bananas, and pudding until you have 2-3 layers, ending with s pudding layer on top.
6. Best egg whites until stiff, add remaining 1/4 cup of sugar, and beat it until stiff peaks form.
7. Spoon egg whites onto top of pudding layer and spread to edge of casserol to seal edges.
8. Surround egg white layer with wafers to give a finished look.
9. Cook in 350 degree oven 10-12 minutes or until peaks are browned.

Cool, and chill in refrigerator. Serve chilled.

I grew up on Mother’s Banana Pudding! This is still one of my favorite desserts and my children love it too!
Growing up, I would hide a small bowl of banana pudding in the refrigerator so no one would else would eat it!
Banana Pudding didn’t last long when Mother made it!
This recipe was always on the Nabisco Vanilla Wafer box. Mother always added some lemon juice to the recipe.
This is truly a Sheffield favorite! :-)
