Ingredients: 2 lbs. ground beef 1 green pepper, diced 1 large white onion, diced 2-15 oz. cans red kidney beans, undrained 2-14 ½ oz. cans diced tomatoes, undrained 1-8 oz. can tomato sauce 1-6 oz. tomato paste 2-4 T. Chili seasoning mix 8-oz. shredded cheddar cheese

Directions:In a 5 quart saucepan, brown beef; add onion and green pepper, saute for 5 minutes. Add next 5 ingredients. Cover and cook on med-high until bubbling, turn to med-low and simmer for ½ hour and serve. Top with shredded cheese. Makes 10 one cup servings. |

Ingredients: ¼ cup ground cayenne pepper ¼ cup paprika 2 T. dried minced onion 4 tsp. ground cumin 2 tsp. dried oregano 2 tsp. salt 1 tsp. garlic powder 1 tsp. dried red pepper flakes . *NOTE: FOR REALLY SPICY ADD 2 T. TO EACH LB. OF MEAT

Directions:In small mixing bowl, combine all ingredients and mix. Add 1 T. to each pound of meat when using. Makes 1¼ cups |
