One 15 ounce can of Eagle Brand Condensed Milk
1/2 cup of fresh lemon juice
1 tsp. grated lemon rind
3 eggs, separated
1/4 tsp. cream of tartar
1/4 cup of sugar
1 graham cracker pie crust

Directions:
Directions:
Preheat oven to 325º

Using an electric mixer, combine milk, lemon juice, rind and egg yolks until well blended. Pour into pie crust.

Using electric mixer, blend egg whites and cream of tartar on medium speed for about 2 minutes. Then slowly add sugar and blend on high speed until stiff peaks form. Spread mixture over pie using a spatula.

Bake until meringue is slightly browned (watch CLOSELY so it doesn't burn). Allow pie to cool completely. Place in refrigerator to chill until served.
