One to two pound round steak, tenderized and cut into serving pieces
1 sleeve of saltine crackers
2 eggs, beaten
1/2 cup milk
1/4 cup flour
1 tsp. salt
1 tsp. ground pepper
1 1/4 cup peanut oil

Gravy:
1/3 cup flour
Salt and pepper to taste

Cut round steak into serving pieces. If you do not purchase tenderized round steak, then tenderize the steak using a meat hammer.
Place the saltine crackers in a heavy ziplock bag and crush until very fine cracker crumbs. Add flour, salt, and pepper to the cracker crumbs and place in a dish.
Crack eggs into a separate dish and beat until well beaten. Mix the beaten eggs with the milk. Soak each steak in the egg mixture for 1-2 minutes and dredge in the cracker crumb mixture.
Heat the peanut oil in a skillet (cast iron works best) to medium-high heat. Fry the steak in the hot oil until each side is golden brown. Drain on a platter lined with paper towels.

After frying all the steak, stir 1/3 cup flour into the hot grease until the flour is well blended. Season with salt and pepper. Gradually stir in milk and cook until the gravy is thickened. If the gravy becomes too thick, add milk gradually until desired consistency.
