2 tbsp. oil
1 clove garlic minced
1 medium onion chopped
1 lb. ground beef
½ tsp. salt
¼ tsp. pepper
½ tsp. crushed rosemary
2 small cans tomato paste
3 c. hot water
½ lb. lasagna noodles
½ lb. ricotta
1 egg
½ tsp. parsley
½ lb. mozzarella cheese

Directions:

Heat oil in heavy sauce pan. Fry garlic and onion until soft. Add beef and cook until crumbly. Mix in salt, pepper, rosemary and tomato paste blended with hot water. Simmer uncovered 30 minutes. Mix ricotta, egg and parsley, set aside. In shallow 9"X13" pan. Spread ½ of the sauce on the bottom of the pan. Layer ½ the noodles topped with ½ the ricotta mixture then ½ of the mozzarella cheese. Repeat layers. Top with remaining sauce. Bake at 350º for 30 minutes. Let set for 15 minutes before serving.
