1 Medium Onion, coarsely chopped
2 Medium Scallions, chopped
2 Scotch Bonnet Chiles chopped
2 Garlic cloves chopped
1 Tbsp five-spice powder
1 Tbsp coarse allspice
1 Tbsp coarse Black Pepper
1 tsp dried thyme
1 tsp fresh nutmeg
1 tsp salt
1/2 Cup Soy sauce
1 Tbsp Vegetable oil
6 lb Chicken

1. Combine onion, scallions, chiles, garlic, five-spice powder, allspice, pepper, thyme, nutmeg and salt in food processor. With processor running, add Soy Sauce and Vegetable oil in steady stream. Pour marinade in shallow dish adding chicken and turning to cover with marinade. Cover and refrigerate overnight.
2. Bring Chicken to room temperature Grlll over medium-hot fire, turning occasionally until well browned and cooked through. 35-40 minutes. Cover grill for smoke flavor
