One (1) 6 3/4 oz. box of Sunshine Vanilla Wafers
1/4 lb. melted butter

Crumb the vanilla wafers.
Add melted butter.
Pat mixture on bottom of 9" spring form to a height of 2" on the sides.
Reserve 1/2 cup crumb mixture for top of cake.
 

Cheese Filling


Ingredients:

Five (5) 8 oz. packages of cream cheese
1 1/2 cups sugar
3 tbsp. flour
1/2 tsp. lemon extract
1/4 tsp. salt
1/4 tsp. vanilla
1 cup eggs (approximately 5 small eggs) plus 2 egg yolks
1/4 cup heavy cream

Directions:

Soften cream cheese, beat until light and fluffy.
Combine sugar, salt and flour.
Add a few tablespoons at a time to cream cheese mix.
Add lemon extract, then a few more tablespoons of flour mixture.
Add vanilla extract, ending with remaining flour mixture. Blend well.
Add eggs, one at a time, beating well after each.
Last, stir in cream gently.
Pour into 9" spring form pan. Place pan under cake in oven.
Bake at 500º for 8 minutes. Reduce to 250º and continue baking for one hour.
Sprinkle remaining crumb mixture on top after first 1/2 hour of baking.
