1 Pork tenderloin ( 2 lb.)
2 cups dry bread crumbs
3 lbs. medium Yukon Gold potatoes, peeled and cut into 1/4 in. slices
3 cups heavy whipping cream
1 cup crumbled Gorgonzola cheese
1 tsp. salt
1/4 cup minced fresh Italian parsley
Lemon wedges

Cut tenderloin into 24 slices. Pound with a meat mallet to 1/4 in thickness. Place four slices in a 4 Qt. slow cooker. Layer with 1/4 cup bread crumbs and a fourth of the potatoes. Repeat layers 4 times

Combine cream, cheese and salt, pour over pork mixture. Cook on low covered until meat and potatoes are tender, 6-7 hours.

Sprinkle with minced parsley with lemon wedges.
